Today for lunch I made a quick tuna, spinach, mushroom, and mozzarella quesadilla. I stuffed the tortillas with three delicious layers.The first is tuna, lime juice, a dollop of mayo, and chopped green onions.The second layer is olive oil-sauted spinach and mushrooms.And the third layer is a bit of grated mozzarella.
