Yesterday I had a book club brunch on the beach, and it was a tough call what was better the book (Unbroken by Laura Hillenbrand, highly recommended) or the brunch. Now, it may not look like this spread featured seafood, but what you dont know is that the doughnut topped with crispy shredded coconut was filled with…brace yourselftuna. Before you judge, let me remind you that sweet pastries filled with savory meat pop up in nearly all cultures. The Czech have the kolache, the Cantonese have the manapua or Cha siu baau, Nebraskans have the Runza, and lets not forget the maple bacon doughnut, which seems to be gaining popularity nationwide. So, really, the tuna coconut doughnut should probably be considered one of the healthier meat-filled buns around. And I promise you, it was addictively delicious.I gobbled the whole thing right up. If you ever get the chance to go to Elvins Bakery in Kailua, HI, you should give one of these unique treats a try.
