tilapia masala with rice from @foodnetwork

We are back in South Carolina this week, but our mind is still on Texas because we just found out were officially moving there this summer! The plan to return (we met in college there twelve years ago) has been in the works a while and were thrilled its come together. Lloyd will be moving on from the Marine Corps and starting business school at Texas A&M in the fall. And I will continue to split my time between the National Fisheries Institute and Harris McGuire, LLC.

After a week away, meals have been made with what we have on hand and tilapia masala with rice is a perfect one since its main ingredients are frozen tilapia, frozen peas, and rice. The only change I made was that I dipped the fish in panko and pan sauteed it after having a great experience with this technique several weeks ago. Yum!
