Thai shrimp halibut curry from @epicurious
This was one of those meals that happen every now and again that I cant believe I made. Ive never had anything like this except in a restaurant and I assumed it called for 35 ingredients. But, thanks to my new bff, Thai red curry paste, this was a snap. Something else I really like about this recipe is that its a seafood dish that will taste just as good leftover, which isnt always the case with fish. Now that I have what I estimate to be a lifetime supply of red curry paste because it is so concentrated, Ive discovered a whole new world of seafood dishes featuring this spicy, bright ingredient. Cant wait to try some of these
