This spring Im heading up an afterschool cooking class series for forth and fifth graders taught by local chefs.Its a project of the Kids in the Kitchen program of the Junior League of Honolulu, a well-oiled volunteer organization that does fantastic work here on Oahu.My committee met on Sunday to get some planning done, and of course used that as an occasion to eat delicious snacks.The sushi bake prepared by my co-chair really impressed me because it was delicious, portable, and perfect for a group.As an RD specializing in seafood who adores entertaining, I was borderline embarrassed that Id never heard of such a thing.I dont have the exact recipe, but its similar to this.To lighten it up a bit, Ill probably try swapping in Greek yogurt for most of the mayo and light sour cream for regular.
