Speedy seafood meals
The last couple days have been busy beyond belief. So this will be a speedy blog, featuring two speedy
seafood meals. For lunch yesterday I
concocted a tuna noodle stir-fry by sauting canned tuna, frozen lima beans,
and sea asparagus in peanut oil (estimated time = 5 minutes) and mixing with cooked
soba
noodles (estimated time = 8 minutes).
For dinner, I soaked the Ahi tuna we got this weekend in
olive oil, salt, pepper, and garlic (estimated time = 10 minutes); pan-seared the
fillet (estimated time = 8 minutes, 4 per side); placed it atop the soba
noodles from lunch (estimated time = 2 minutes); and topped the dish off with a
splash of soy sauce and lemon (estimated time = 2 minutes).
