I adore tamales and order them in restaurants any chance I get, but never thought I could make them at home.Granted, this shrimp tamale casserole recipe is kind of the training wheels version of the real deal because there are no husks involved.But I made it myself and it tasted just like traditional tamales.The mole sauce was also a first for me.I was surprised by a few of the ingredients like peanuts and tortillas, but low and behold, it tasted just like mole when it was done.On the side is simple sauted spinach with a little shredded cheddar. Between breakfast and lunch today, I think weve only got one little bite of casserole and sauce left.
