We love our bi-weekly Community Supported Agriculture (CSA) box.If you dont enjoy cooking greens (kale/chard/collards) you might not be such a fan, though, because we get two overflowing bags per box. Fortunately, Lloyd and I are both greens fiends and have been happily eating them in any creative application we can dream up (green eggs finely chopped kale mixed in to scrambled eggs are becoming common at breakfast).Today Lloyd came home for lunch and helped me make an awesome recipe that really made a dent in our kale/chard/collards supply, seared scallops with white beans and bacon.Beyond chopping a little red onion, clove of garlic, and the greens (which we used instead of spinach), there was nothing to it. Absolutely perfect for an easy Friday lunch.Hope your weekend is great.
