sauted shrimp over kale, radish, and quinoa salad inspired by @Ottolenghi

I began to develop a crush on the flavors of Chef Yotam Ottolenghi a couple months ago, and now Im a full-fledged stalker. I cannot get enough of the creative, unexpected, absolutely mouth-watering dishes he comes up with. Yesterday, I made a version of this quinoa salad for dinner, but swapped in kale and shrimp for the fava beans and avocado, due simply to what I had in the kitchen. It tasted so good. I regret not making more because theres not a bite leftover. I havent bought a cookbook in a while because there are so many recipes available online, but I have officially added Chef Ottolenghis latest publication to my wish list.
