Salmon burger
I’ve been obsessed with Zonya’s salmon
burgers for a while now, and have made them so many times that looking up
the actual recipe became unnecessary months ago. The next logical step for me after memorizing
a perfectly delicious recipe is to start experimenting with variations. So the last several burgers I’ve made
included a variety of additions and substitutions, ranging from chopped green
olives and crumbled feta cheese to jerk seasoning and orange juice. As of last night*, I moved on to toying with
the toppings on the burger, and came up with a great combination inspired by
leftovers from our fish tacos a couple nights ago. We all know what tastes good on a beef
burger, but salmon burgers aren’t so obvious.
I was quite happy with my combination of slice red onion marinated in
lime juice, sauted spinach, and a light sour cream and chipotle spread.
This weekend I’m hoping to get some beach time since we’re
expecting heavy rains starting Monday due to Hurricane Felicia. The good news about the rain is there are a
few movies in the theatre I want to see, so this might be my chance. Have a great weekend!
