Penne with shrimp and herbed cream sauce

To celebrate our lack of a Monday morning this week, we had
a fun dinner party Sunday night. Our
impromptu menu included the following:

Grilled
Clams in the Shell with Serrano Ham

Penne
with Shrimp and Herbed Cream Sauce

Mixed
Green Salad with Sherry Vinaigrette

Garlic Bread

My
last dinner party (stuffed peppers) didn’t turn out so hot, so this delicious
meal was quite redeeming. Absolutely
everything is a “do-over,” especially the salad. This week my parents and two of their dear friends
are in town, so there are more yummy meals to come. I always like introducing different species
of fish to my parents since, left to their own devices, they don’t branch out
much. But they’re willing to try
anything, and usually end up loving it.

Taste
is the number one reason why most people say they don’t eat more fish. But confusion about mercury is another
factor. I was excited to see that “Fish
Tales” made Cooking Light’s ten most important nutrition stories of the last
two decades
, and that the conclusion reads, “Fortunately, the confusion has
been cleared…the health benefits of eating seafood outweigh its risks, even for
pregnant and nursing women.”
