pan-fried trout with red onion and orange relish

We are in Texas this week for a wedding and my mother-in-law’s 60th birthday. My mother-in-law has cooked us so many delicious homemade meals, including a couple week’s worth shortly after Harris arrived, so we thought we’d show our appreciation by making dinner for her. The one rule — she wasn’t allowed to lift a finger (this is tougher than it sounds for the hardworking birthday girl). Thankfully, we kept her on the couch while we made pan-fried trout with sauteed spinach and roasted new potatoes. Of course, everything tastes better when someone makes it for you, but these recipes were pretty great anyway. And the best birthday gift of all, time with the grandbaby.
