orzo with sundried tomatoes, olives, almonds and tuna
One of the things the military will not include in our move is opened food products. This includes spices (so sad!), opened pantry items, and refrigerated condiments/jarred goods (understandable). Yesterday I decided to try and make a dent in our opened food with a quick orzo dish. I simply sauted chopped sundried tomatoes in oil, chopped Kalamata olives, and slivered almonds along with a little minced fresh garlic. The oil from the tomatoes was enough to coat everything in the pan. At the last second I added a couple cans of drained albacore tuna to heat through and mixed the whole thing with cooked orzo and fresh parsley. For some reason I dont find orzo very filling, but the tuna and almonds made this a satisfying lunch.
