Im about to head home from a work trip to Washington and New York during which I had two delicious seafood meals. But before I share those, I have to pass along the best marinade recipe, which we made on Sunday before I left. A lot of marinades are a bit too subtle to get me excited. The sweet, salty, and acidic flavors in this one really stayed put in the fish. And that was after only about 40 minutes of marinating. If you can deal with a little bit of chopping, this vegetable, watermelon, and feta salad is a really refreshing, feel-good-after-you-eat-it side.
