Make MyPlate Pinterest Challenge: seared tilapia with summer squash salad from @womansday
When it was so sunny and warm the other day that I needed to dress Harris like this for a walk, it officially feels like summer in South Carolina.
This tilapia and squash mealfrom the MyPlate Fish Entrees Pinterest board even looks like a plate of sunshine. Its nothing fancy, just a handful of ingredients heated in olive oil. A lemon wedge on the side goes a long way to brighten the whole thing up.
And I love how Womans Day includes this tip for how to love the leftovers.
Love your leftovers. For a tasty rice salad, combine the leftover rice and squash mixture with chopped fresh tomatoes, 2 Tbsp lemon juice and chopped fresh basil. Top it off. Fold in cup toasted pine nuts or chopped almonds to the cooked squash mixture. Sprinkle with crumbled feta, then serve with the fish.
We only had rice and squash the next day, so I tossed in basil, almonds, feta, and a can of tuna. Lunch perfection.
