Make MyPlate Pinterest Challenge: salmon with olive vinaigrette @FoodNetwork
Heres to another delicious MyPlate Pinterest fish dish Salmon with Olive Vinaigrette from Bobby Flay for Food Network Magazine. It was a gorgeous here in the DC area on Sunday, so we fired up the grill and enjoyed this delicious al fresco.
This recipe calls for 8 simple ingredientsseven of which are blended together to make a smooth and mildly sweet marinade and dressing for the fishplus salt and pepper. Trying to eat less sodium? Taste the vinaigrette before adding the salt. I found that a little of the olive oil, red wine vinegar, pitted black olives, cayenne pepper, garlic, Dijon mustard and honey dressing was flavorful enough, so I skipped the added sodium. And between marinating the salmon and drizzling on after grilling, we only used about half of the vinaigrette.
Make it the MyPlate Way
To round out this omega-3 rich protein, I served with sauted Swiss chard, Israeli couscous (ideally this would be whole grain, but I only had regular couscous on hand) and a small Caprese salad of fresh basil, fresh mozzarella and heirloom grape tomatoes with a little olive oil and balsamic vinegar. Add some strawberries for dessert and youve got a deliciously complete MyPlate meal.
