Yum and simple! We tried the Salmon Cakes with Caper Mayonnaise from @DiabeticLiving earlier this week. The cakes were a big hit with the family, even my 3-year-old and 1-year-old!
My kids are not the most adventurous eaters, which is not uncommon for young children. This will come as no surprise, but the dietitian in me breaks into a secret celebratory dance when my kids reach for healthy foods, like fish. Fish helps kids meet their needs for important nutrients, such as protein, vitamins B12 and D and essential omega-3 fatty acids.
Making the Salmon Cakes
The cakes are simple. Mix an egg white, green onion (I used a Vidalia because thats what I had), lemon juice, Dijon-style mustard, salmon (I used 2 (6-oz) cans flaked salmon to save time), saltine crackers (whole wheat Panko crumbs did the trick for me) and a little salt and pepper (I skipped the salt). I found the patties a little dry, so I added a little more mustard and a spoonful of light mayo. That did the trick. We grilled them (it was so nice out!) and the patties stayed together perfectly.
While the cakes were grilling, I threw together a mixed greens salad with tomatoes, cucumber, a little feta cheese and a homemade dressing of red wine vinegar, olive oil, a little and some lemon juice. Then, I whipped up the Caper Mayonnaise, which we drizzled on the salmon cakes. This weeknight dinner was delicious and on the table in less than 30 minutes!
