I am still looking for the ultimate homemade fish sticks recipe, and though this wasnt quite it, it was close. My favorite thing about this recipe is the breading. It doesnt require any special breadcrumbs (which can be really hard to find), just regular old bread slices. But its still interesting and flavorful with that parmesan and lemon rind in there. My least favorite thing was that 15-20 minutes of bake time resulted in somewhat overcooked fish. This might be my ovens fault (Im still getting to know it), but next time I would go with about 10 minutes. Easy baked sweet potato fries and a yogurt dip with fresh lemon juice, cumin, and salt and pepper were the perfect sides.
