Herring Caesar salad
Last Friday I wasn’t feeling great, so while Lloyd went to Foxwoods for a last hoorah with his classmates, I stayed home and had pizza and a salad delivered. The next day, I turned the leftovers from my chicken Caesar salad in to a herring Caesar salad by topping the romaine leaves with half a tin of herring. It was salty and rich. Herring in a tin is my new favorite discovery – for a major boost of omega-3s and flavor, you can add these little, oily fish to just about anything.
