This weekend we headed over to Gay Fish Company to stock up on fresh seafood. I didnt have any particular recipes in mind the plan was simply to pick up whatever looked delicious and work it into our meals where we could. Shrimp is sort of Gay Fish Companys specialty, so the four-cheese pasta with cauliflower I had planned for Saturday night became four-cheese pasta with cauliflower and shrimp. I followed this recipe exactly, but just stirred in some sauted shrimp at the end and then broiled the whole thing for a minute to get a little bit of a cheesy crust. This is my new favorite mac-and-cheese recipe because it strikes the perfect balance between healthful, decadent-tasting, and easy.
