Last week I had lunch with my friend and former colleague, Clara. We met at Mad Fox Brewing Company, a cute little pub in Falls Church about halfway between our homes. Yes, they make their own [really good] beer, but they also serve great grub, too.
Having caught my daughters cold, I wasnt feeling great and needed a tasty and nourishing comfort dish. When the server mentioned the fish tacos special, I was sold. Blackened cod was served on corn tortillas with a black bean and bulgur spread, vinegar cabbage (the chef called it oil-less coleslaw), Pico de Gallo and an Aji Verde sauce (which is a Peruvian green chili sauce). The tacos were served with a fresh mixed greens salad. Together, the two made a delicious and filling lunch.

Cod is a cold-water white, mild-tasting fish. Low in calories (about 120 calories per 4 ounces), cod is a good source of selenium, protein and vitamins B6 and B12. The US 2010 Dietary Guidelines for Americans recommends increasing the amount and variety of seafood we eat by replacing some meat and poultry with seafood each week. This dish is a tasty way to meet your seafood needs. And, its proof that fish need not be fried to make great tacos!
