creamy garlic pasta with shrimp and vegetables
My good friend and fellow run club member ran her first half marathon on Sunday, so Saturday night a few of us got together to ensure she ate a nourishing last supper.When it started to get a little late in the day and we still hadnt selected a recipe, take-out pizza weaseled its way in as an option, but a quick pasta search on EatingWell.com got us back on track.Creamy garlic pasta with shrimp and vegetables was just a quick to make as pizza would have been to pick up, and it was very delicious. Even I was a little hesitant about the large variety and amount of veggies it called for, but the lemony, garlicky sauce pulled them all together. The bite-sized shrimp bits were the perfect pop of protein. We all got to take home leftovers, which I loved today for lunch.
Over the week-end I felt settled enough in to our new place to make a meal plan.
