blackened catfish
I am in Texas now through the week after Thanksgiving. Cooking with and for my family here is always a blast – I love introducing them to foods they don’t normally make and seeing their positive reactions. Saturday night, for example, I made blackened catfish and rice while my mom made margaritas. I think the biggest shock of the evening was that the meal took a significantly shorter amount of time to prepare than the drinks. Also shocking to my family – 1) the fish didn’t smell up the kitchen, 2) we had every last ingredient for the recipe on hand except for the fresh fish itself, and 3) blackened fish is just as good or better at home as it is in restaurants. Oh, and the total cost of four servings of catfish (one pound) was $4.99.
