Benedict breakfast

I’ve had two nice long jogs this week in preparation for a
10k I’m running on Saturday, so when I woke up this morning, I was
ravenous. Cereal with fruit wasn’t going
to cut it, but I still wanted something healthful, so of course I thought of
fish. What I ended up making is loosely
based on Crab Cakes Benedict.

First I
toasted half of a whole wheat English muffin.

Then (to represent the Barnaise
sauce), I mixed a bit of canola mayonnaise with lemon juice and spread on the
muffin.

On top of the lemon mayo went a salmon burger.

And finally, a poached egg with salt and pepper.

Normally I wouldn’t put more than a few minutes of effort in to
breakfast, but it was a hearty, comforting way to start the day and kept me
full for hours.
