artichoke-parmesan tilapia pasta from @robinvmiller

The last time I made a version of this recipe was the night before running my first half marathon last year. Since then, I ran another half marathon, but then along came a mild, but pesky knee injury. I wasnt stretching or cross-training enough, so now Im a lot more balanced with my exercise. I still run a few miles a week, but also hike, walk, play tennis at the most rudimentary level possible, and practice yoga including hot yoga (which replaces the intensity of longer runs). Yesterday at lunch I was in the mood for a super satisfying meal after a hot yoga class Id taken the day before, and in anticipation of a big hike Im going on tomorrow morning, when my old favorite pre-race meal came to mind. Theres something so cravable about this simple, mild, pretty dish.
