“tuna casserole” sandwich

Today is the calm before the fantastic fun-filled storm of four girlfriends from grad school descending upon my little home by the sea for our annual reunion. All of them are registered dietitians like me, and one is a full-blow chef, so there will be many delicious and wholesome meals over the long holiday weekend. To keep things simple today, I made an easy tuna sandwich with diced shallots, chopped sugar snap peas, lemon juice, and a dollop of mayo.Kind of a deconstructed tuna casserole.Yum.
