oven-baked salmon with roasted potatoes and beets and sauted kale

My parents-in-law are coming in to town tomorrow through the Fourth of July weekend to welcome Lloyd home from Afghanistan. We also have a handful of backed-up birthdays and other holidays to celebrate. In anticipation of quite a few meals out, Lloyd and I attempted to clean out the kitchen last night.He baked a filet of salmon and I cooked a hodge-podge of straggler veggies.Potatoes and beets went in the oven and kale (yes, we still had kale, but not anymore!) went in a saut pan with a little olive oil.We also had some Greek yogurt that I wanted to use before it was too late, so I whipped together a little lemon yogurt sauce based on this recipe.It was an overall easy and satisfying Sunday meal.
