cherry, walnut, and mango tuna salad sandwich

Today Im in beautiful Kirkland, WA outside of Seattle for a meeting of the National Fisheries Institute executive committee. Yesterday we went on a breathtaking boat ride on Lake Washington to a dinner at delicious Daniels, which I will post about tomorrow.But first I have a bit more modest post about my lunch from Sunday. This is actually one of the most amazing tuna sandwiches Ive ever made, so I simply couldnt let it slip through the cracks.Heres the recipe (you know Im not big on exact measurements, and it especially doesnt matter when it comes to tuna mix-ins):

1 can albacore tuna, drained
1 small dollop mayo
handful of dried cherries
handful of walnut pieces
smear of mango preserves (this may be a Hawaii thing I think most any fruit spread would do)
Simply mix the first four ingredients together, spread the preserves on whole wheat bread, and assemble the sandwich.
You may recall I have a long-standing love affair with the fruity tuna pita from Aloha Salads, and this is the closest Ive come to replicating those flavors without taking the effort of cutting up fresh fruit.Usually if Im going for a tuna sandwich, Im in a hurry. Cant wait to make this delightful treat again!
