grilled halibut with lemon-basil vinaigrette
There is no better souvenir than the one our friend Greg brought us from his trip to Alaska.
Greg coaches the Kailua Racquet Club mens tennis league Lloyd joined immediately upon returning from deployment.Im not sure if Coach Greg knows about my love affair with seafood, and he certainly doesnt fully understand how much we appreciate these four fillets. We will be slowly savoring each one. We started with the halibut.I figured this grilled halibut with lemon-basil vinaigrette recipe was Alaskan-halibut worthy, and it was.On the side is baked eggplant and zucchini, which conveniently soaked up the zesty vinaigrette.Eating this fish felt almost like a special occasion, so I also sprung for three gorgeous heirloom tomatoes to make a caprese salad.
As a small gesture of appreciation for the fish, Lloyd and his team ended up winning sectionals last weekend (the transparent trophy says Hawaii Pacific 2011 Adult Section Champion).Theyre headed to nationals in Arizona in October!
