tuna pomodoro over spinach
Yesterday Lloyd came home for lunch, which always inspires me to make something especially satisfying. While I have the luxury of healthfully snacking in the afternoon at my leisure since I work from home and have access to a full kitchen, he often works from lunch to dinner without a snack break.So his lunches cant be quite as light as mine.I had some tomatoes and was planning to throw together a fresh pasta pomodoro.But once I learned he was headed home, I decided to make the meal a bit heartier by adding canned tuna to the sauce.No recipe here simply saut diced fresh tomatoes, minced garlic, olive oil, salt, pepper, and tuna.The fiber from the whole wheat angel hair and the spinach also helped to keep Lloyds hunger pangs at bay until dinner.
