tuna, green pepper, and ricotta pitas

Yesterday Lloyd and I kayaked out to the Mokes with some friends and knew wed need a hearty lunch to refuel as soon as we got there.Its a good hour worth of kayaking in the hot sun from our place to the twin islands, so whatever I packed had to hang in there.Tuna of course came to mind as my favorite source of portable protein, and pitas seemed like the best non-squishable bread option.The mix-ins were purely a result of what I had in the fridge diced green pepper, fresh parsley, and a dollop of ricotta cheese to hold it all together.The result was fresh and filling.
