Kofte, it turns out, is a Middle Eastern meatball.They are traditionally made out of beef or lamb, but fish and vegetarian varieties are popular in India.And in my kitchen.Lloyd helped chop the garlic, onions, and tuna for this recipe and it came together in about 15 minutes.It was gobbled up in less than that.Dried cranberries stood in for pomegranate seeds, as pomegranates are few and far between in Hawaii.And dont skip the honey and Dijon mustard!It sounds a bit different, but is essentially a deconstructed honey-Dijon dressing.Overall, this dish was incredibly easy, healthful, and unique.
