tuna noodle casserole from @epicurious

The topic of casseroles came up recently among a few friends (I hang with some food lovers). One pal brought up his undying love for casseroles and we all agreed, but then, totally unprovoked, he shared the only type of casserole he does not like istuna casserole! I was appalled, of course, because this is clearly among the most classic, comforting, and potentially healthful casseroles around. I immediately offered/demanded that our friend come over to dinner at our place soon and try my homemade tuna casserole.In preparation for this dinner, I tested a tuna noodle casserole recipe from epicurious.com that got rave reviews. Lloyd is a little biased on his own, so I brought the dish up to him and his colleague who were burning the midnight oil on Saturday in preparation for a trial this week.They ate it right up and went back for seconds, so I think this is the recipe.The salad is topped with anchovy and roasted garlic vinaigrette, which is now officially my go-to dressing.
