This is my last evening in Atlanta for the Les Dames dEscoffier annual conference, and my first opportunity to write about it. What a busy and magical few days its been. Les Dames is an organization of women leaders in food who invited me to speak to them about fish. They were the most curious and friendly group, and Im leaving Atlanta feeling totally re-energized about working in the field of food. One of the reasonsI get to continue my education with fascinating outings like the one we took a couple days ago to the Buford Highway Farmers Market. This place was unreal. Its basically a giant international grocery store with the entertainment value of (an authentic) Epcot Center. Foods from Mexico, Central and South America, the Caribbean, West Africa, Japan, China, Thailand, Vietnam, the Philippines, Eastern Europe and more can all be found under this well-organized markets roof. They have one of the largest fresh produce departments in Atlanta

At the end of our tour, Dame Philippa Kingsley, Thai cuisine chef and international Thai cookbook author, demonstrated how to make green mango salad with crab. I can still conjure up the bright flavors from this gorgeous dish. I bought a Thai slice peeler from the market so I can try and recreate it at home. The recipe was similar to this plus canned lump meat crab.
