We had one salmon fillet left from our Alaskan souvenirs, and decided to use it up before we get too close to our move. This salmon, wild rice, and mushrooms en papillote recipe was well-balanced with a short list of ingredients, so we gave it a try. I made the rice while Lloyd made the mushrooms mixture. We joined up to assemble the packets (with foil instead of parchment), and 8 minutes later, dinner was served. Because of the ease of the recipe, I thought it might be a bit bland. But the dish was bursting with complimentary flavors. Highly recommended.
