tuna in olive oil with olives on pumpernickel
Lloyd and I had a big weekend in terms of baby prep. What used to be a room with randomly scattered supplies now resembles a nursery with a dresser/changing table and fully assembled crib. We also have the bassinet, which will go in our room, in one piece. Its amazing how much comfort something as simple as furniture brings me as a mom-to-be in borderline nutty nesting mode. Since we were on a mission, meals were quick and filling. I have been buying tuna in olive oil lately because I welcome the extra good fats now that my compressed belly only allows for mini meals. So I mixed that with some sliced green olives and spread it on a couple slices of hearty pumpernickel bread. We barely skipped a beat assembling baby furniture as we fueled up for the afternoon.
