Cooking fish is easy. Cooking frozen fish that hasnt thawed? Not always so easy. Until now
As Ive written before, I try to plan out the weeks menu. But, I dont always have the time or, frankly, the inclination to do so over the weekend. Last week was one of those weeks. I came home from work and stared into the freezer while my toddler and baby were banging on the table, ready to eat RIGHT NOW! Clearly, there was no time to waste before all you-know-what broke loose.
So, I grabbed two frozen salmon fillets from @costco and turned on the oven. Luckily, I had just seen the recipe for Herb-Crusted Salmon with Roasted Tomatoes in @BetterHomesandGardens about roasting fish right out of the freezer. The verdict? Delicious! Turns out this recipe was also on Make MyPlate Pinterest fish entrees page, which Jennifer and I are loving these days.
Easy Way to Cook Frozen Salmon
To cook from frozen, simply preheat the oven to 400F, then cook the salmon for about 30 minutes or until the fish cooks through and flakes easily.
This recipe calls for capers and fresh parsley, neither of which I had. So, I skipped the capers and mixed frozen parsley cubes (which meant I didnt have chop or process the parsley) with olive oil, garlic and pepper. I spread that on the frozen salmon fillets and topped with chopped cherry tomatoes. After cooking for 15 minutes, I added the golden raisins and cooked for another 15 minutes. To make it MyPlate-style, I served the salmon with a small mixed greens salad (tossed with a simple homemade balsamic and olive oil vinaigrette), sauted asparagus and farro (a mild whole grain). With a thumbs up from my husband and the kiddos, this is definitely a MyPlate-friendly recipe Ill be making again!
