Make MyPlate Pinterest Challenge: Spanish-style cod from @CookingLight
This recipe caught my eye because it has five ingredients. I was able to gather all the ingredients, chop the garlic (I used fresh), season the fish (I used cod because we had it in the freezer), and saut the bacon in about 30 minutes, which is about all the time my busy bee will stay in his wrap lately.
I set that all aside and later, while I was putting Harris to bed, Lloyd tossed everything in a pan and dinner was ready and waiting when I emerged from the nursery. Honestly, it wouldnt have much mattered what the meal was because a quiet dinner with my husband and a glass of wine on our deck is heaven any way you slice it. But this dish was truly tasty in a simple, satisfying way.
