Tuna steak stroganoff

As I started to get hungry for lunch today, I scanned
the pantry and egg noodles caught my eye.
I decided to concoct a “tuna steak stroganoff” dish, which turned out
well. So here’s the “recipe,” minus those
pesky exact measurements.

As the whole wheat egg noodles are boiling, gently heat the
following ingredients in a small pan:

-skim milk

-pat of butter

-spoonful of ricotta cheese

-sprinkle of flour

-splash of white wine

-salt and pepper

Once it thickens a bit, add a pouched albacore tuna steak
(any flavor will do, mine was mesquite).
Break the steak up in to bit-size pieces and pour your tuna steak
stroganoff sauce over the drained egg noodles.

It’s savory and rich tasting, but with much less bad fat
than a traditional beef stroganoff. And with
a whopping 35 grams of protein from the albacore steak alone, I should be all
fueled up for a hike this afternoon that I have planned with a friend.

Tonight I was thinking of making another creamy dish to
celebrate the end of Lloyd’s first case as lead prosecutor. I took the day off Tuesday to watch his
opening and witnesses and was extremely proud.
I think a bit of champagne may be in order…
