Salmon crumble
I am going out of town Wednesday night for a weekend of fun
followed by a week of work. The fun part
is a couple of days in Las Vegas
for my little sister’s 21st birthday. The work part is meetings in Washington, including
the third meeting of the Dietary Guidelines Advisory Committee. Though I am always hesitant to leave Oahu, both travel stops should actually be entertaining
in their own right.
Since I’m going to be gone for a full ten days, I’ve halted
all grocery shopping and am getting creative in making use of what we already
have in the house. Yesterday for lunch, that
resulted in a baked potato topped with salmon crumble. I started with the idea to pair a leftover
baked potato with a salmon burger,
but because I added too much citrus juice, the burger fell apart. Hence the salmon crumble topping. Turns out the final dish was comforting and
delicious – who needs Bacos?
