Pecan crunch salmon
The halibut from Washington two nights agowas fantastic, but last night’s Copper River salmon was once-in-a-lifetime incredible. Surprisingly mild, rich, smooth…and the slightest bit sweet and crisp thanks to the perfect pecan crunch topping. Though we won’t have this very special Copper River salmon again any time soon, I will definitely remake the recipe using the kinds of salmon available in our local grocery store. And I’m sure it’ll still be pretty delicious.
