This week I am in Omaha, NE unexpectedly for my beloved grandfather’s wake and funeral, which were absolutely beautiful. Because Thanksgiving is just a week away and then I have a trip back to the office in Washington, DC scheduled for early December, I am just staying on the mainland for the next few weeks. This means no meal plans for a while – travel plus the holidays equals unpredictable eating. After a few days of tasty (but rich) casseroles and cheese platters that friends and family dropped off, I finally got my seafood fix at a neighborhood Tex-Mex restaurant. I ate a little more than half of these sizzling shrimp fajitas, and will probably snack on the remainder today.
