Oyster Stuffed Tomatoes

Ingredients: 
12 grape or cherry tomatoes
One 3.75-ounce can smoked oysters, drained
1 teaspoon finely chopped fresh parsley

60 calories, 3g fat (1g saturated, 0.15g omega-3), 100mg sodium, 5g carbohydrate, 2g fiber, 5g protein, 10% vitamin A, 10% vitamin C, 25% iron

Instructions: 

Slice the tomatoes about 2/3rds of the way through, with the stem end facing down. Gently open the tomato and stuff with an oyster. Arrange on a plate, sprinkle with the parsley and serve.
